Raw Thumbrint Cookies


Lately, I feel like I’ve been so busy I don’t have time to do anything besides working and being a mom. I got a new job thatΒ I’ll be starting soon, which is part of stress that has been on my plate. I haven’t been cooking and baking as much, which I hate, but it should become a bit better.

The problem with being super busy and stress is that the food I eat is not always the best for me because I’m in a rush.Β How many times have you thought “oh I wish I had a simple, yet nutritious snack right about meow?” I know I have, a lot. Look no further! These raw cookies are delicious, nutritious and 5Β ingredients only!


  1. 1/2 cup sesame seeds
  2. 1/2 cup flaxseed
  3. 1/4 sunflower seed
  4. 2 cups dates, soaked for 15 minutes
  5. chocolate for topping
  1. Soak dates in warm water for 15 minutes.
  2. Blend in the food processor until smooth.
  3. Mix with the seeds and form little balls.
  4. Press into baking sheet covered with parchment paper.
  5. Melt chocolate or make your own and pour on top.
  6. Let sit in the fridge until chocolate hardens, then store the leftovers in there too.
  7. Enjoy with loved ones!



Vegan Power Chocolate!


Hi everyone! I’m so excited about this I’m putting exclamation points everywhere haha πŸ˜€ Are you ready for xmas?

I was planning to bake traditional cookies from Slovakia, but I’ve been putting it off and I’m not even sure if I’ll be making them at tall. Last week I was playing around with chocolate and when I made peanut butter and chocolate cupsΒ I had some leftover chocolate. I didn’t want to put it away before I created something with it so I came up with the idea of power chocolate.


I put equal amounts of chia seeds, sunflower seeds and flaxseed, gave it a good elbow grease to mix, sprinkled with coconut and there you have it – super easy power snacks. The amounts here are pretty much up to you, but I put about 1 tbsp of each into about 1/2 cup of chocolate (it all filled two regular sized cupcake molds).


As always, I encourage you to experiment and put different ingredients in to see what you like best. Chia and flaxseed are so nutritious and they go with everything. Plus, I love crunchy snacks πŸ™‚ Coconut adds the needed sweetness and even more healthy goodness.

Make sure you let them set for about 30 minutes in the fridge and they’re ready! I like the reusable molds because I can take them as snacks to work, wash and take back home. As I keep saying – EASY.
